Easy Brownie Mix Cookies

Easy chocolate cookies made with brownie mix that are chewy, fudgy, and so quick to make!

Ingredients

  • 1 box Brownie Mix Any brand will work
  • 2 Eggs
  • 1/3 C Vegetable Oil
  • 1/2 C Semi-Sweet Chocolate Chips
  • 1 Tsp Vanilla Extract
  • Sea Salt Optional

Instructions

  • Pre-Heat oven to 375F
  • Line baking sheet with parchment paper.
  • In a large bowl, combine all of the ingredients (except for the sea salt). Mix until well combined.
  • Using a cookie scoop, place cookie dough on baking sheet about 1 inch apart.
  • Bake for 10-12 minutes until edges are slightly crispy.
  • Once removed from the oven, sprinkle each cookie with a little bit of sea salt. This is optional, but we love the salty/sweet combination.

Notes

  • If you want slightly thicker cookies, you can chill the dough for 30 minutes before you bake it, but chilling isn't absolutely necessary.
