These super easy brownie mix cookies are soft, fudgy, chewy and so quick to make!
If you’ve been with us for a while, then you already know we love a good cake mix recipe. Say what you want about boxed mixes, but if you’re in a pinch and need a dessert in a hurry, there are so many ways you can re-purpose boxed cake mix to get a quick, but delicious treat! For us, cake mix cookies will always hold a giant special place in our hearts.
What are brownie mix cookies?
Brownie mix cookies are cookies made with boxed brownie mix, giving you thick, fudgy and extra chewy cookies. We cannot get enough of the texture of these cookies. If you like your cookies thick and chewy, then this is the recipe for you.
What do you need to make these cookies?
- Boxed brownie mix (any brand will do!)
- Eggs
- Vegetable oil
- Semi- Sweet chocolate chips
- Vanilla Extract
That’s it! And did we mention this is a one bowl recipe? Well, friends it’s a one bowl recipe which means minimal clean up needed. Reason 542 why we love these cookies.
How do you make brownie mix cookies?
All you have to do to prepare these cookies is throw all of the ingredients into a bowl and mix them until they are combined. That’s it. No, really. It doesn’t get any easier that this.
Scoop the dough onto a parchment lined cookie sheet (we used a 2 inch cookie scoop, but this set of 3 is very nice to have). Bake these in a 375F oven for 10 minutes, sprinkle with a little sea salt and you are in brownie cookie heaven. The sea salt sprinkling is optional, we just love a good salty sweet combo!
We tried this recipe 2 ways – the first time we scooped our dough onto a cookie sheet and then chilled it in the fridge for 30 minutes. The second time, we made these but didn’t chill the dough before we baked them. The chilled cookies definitely stay a little bit thicker after baking, but both ways yielded delicious and chewy cookies. So chilling the dough is definitely optional.

Easy Brownie Mix Cookies
Ingredients
- 1 box Brownie Mix Any brand will work
- 2 Eggs
- 1/3 C Vegetable Oil
- 1/2 C Semi-Sweet Chocolate Chips
- 1 Tsp Vanilla Extract
- Sea Salt Optional
Instructions
- Pre-Heat oven to 375F
- Line baking sheet with parchment paper.
- In a large bowl, combine all of the ingredients (except for the sea salt). Mix until well combined.
- Using a cookie scoop, place cookie dough on baking sheet about 1 inch apart.
- Bake for 10-12 minutes until edges are slightly crispy.
- Once removed from the oven, sprinkle each cookie with a little bit of sea salt. This is optional, but we love the salty/sweet combination.
Notes
- If you want slightly thicker cookies, you can chill the dough for 30 minutes before you bake it, but chilling isn’t absolutely necessary.
