Peanut Butter Banana Muffins

Ingredients

  • 1/2 stick butter softened
  • 6 tbsp light brown sugar
  • 2 bananas, browned mashed
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 cup peanut butter
  • 1 tbsp molasses
  • 1 cup all purpose flour
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Pre-heat oven to 350 F
  • Line muffin tin with liners and set aside.
  • In a medium size bowl, combine flour, baking soda, and ground cinnamon, set aside.
  • In the bowl of a stand mixer, mix together the butter and sugar until smooth and creamy.
  • Add the vanilla and egg, and mix until combined.
  • Add in the mashed banana, peanut butter, and molasses and mix until combined.
  • Slowly add in dy ingredients, and mix until just combined. Be careful not to over mix!
  • Fold in chocolate chips.
  • Fill cupcake liners 2/3 full, and bake for 15-17 minutes, until toothpick insert in center comes out clean.

Notes

Optional: before baking, sprinkle some turbinado sugar on top of the muffins. This will create a nice crunch on top when they come out of the oven!
