Baked Lemon Donuts

Baked lemon donuts topped with a sweet lemon glaze.

Ingredients

For the donuts

  • 1 Cup flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 2 TBS melted butter
  • 1 egg
  • 1/3 Cu milk
  • 1/4 cup sour cream
  • 1 tsp vanilla
  • 1 TBS lemon juice

Glaze

  • 2 TBS unsalted butter melted
  • 1 cup confectioners sugar
  • 2 TBS milk
  • 1 TBS lemon juice
  • 1/2 tsp vanilla extract

for garnish

  • Freeze dried fruit of your choice crushed into powder

Instructions

  • Preheat oven to 350F. Spray a donut pan with baking spray.
  • For the donuts, whisk together the flour, baking soda, and baking powder. In a separate bowl, whisk together melted butter, vanilla, egg, sugar, milk, lemon juice and sour cream.
  • Pour the wet ingredients into the bowl with the dry ingredients and mix until combined.
  • Pipe the batter evenly between 6 donut molds, about 2/3 full. It is easiest if you put the batter in a ziplock bag and cut the corner off.
  • Bake for 10 minutes or until a toothpick inserted comes out clean.
  • Let cool before removing from molds.
  • For the glaze, whisk all ingredients together until smooth. Add more milk if consistency is too thick. Once donuts are cool, dip them into the glaze and sprinkle with the powdered fruit. Garnish with fresh fruit if desired.

Notes

We used pre-packaged lemon juice, however you could also use fresh if desired!
