Chocolate Sheet Cake

Ingredients

For the cake

  • 2 eggs
  • 1/4 cup sour cream
  • 3/4 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 TBS vanilla
  • 1 1/2 cups flour
  • 1 1/2 cups sugar
  • 1 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 3/4 cup hot coffee

Vanilla buttercream

  • 2 sticks unsalted butter softened
  • 1 TBS vanilla extract
  • 4 cups powdered sugar
  • 2-3 TBS milk or heavy cream

Instructions

For the Cake

  • preheat oven to 350 degrees F. Line a 9X13 baking dish with parchment paper.
  • In the bowl of a stand mixer beat together the eggs, oil, sour cream, buttermilk and vanilla. Slowly add in the flour, sugar, cocoa powder, baking powder and baking soda. Slowly pour in the coffee. Batter will be thin.
  • Pour into baking pan.
  • Bake for 25-30 minutes or until toothpick inserted comes out clean. Let cool completely before frosting.

Buttercream

  • Beat butter in a stand mixer until smooth and light. Slowly add in powdered sugar. Add in vanilla. Add in milk until desired consistency is reached.

Assembly

  • Once cake is completely cool, cover with frosting.
