Sugar Cookies with Almond Buttercream

Soft sugar cookie cut outs topped with a rich almond buttercream!

Ingredients

  • 2 sticks butter, softened
  • 1 cup granulated sugar
  • 1/2 TBS vanilla extract
  • 1/2 tsp baking powder
  • 3 cups all purpose flour

Buttercream

  • 2 sticks unsalted butter
  • 4 cups powdered sugar
  • 1 TBS almond extract
  • 2-3 TBS milk

Instructions

  • Pre-heat oven to 375 F
  • In bowl of a stand mixer, cream together butter and sugar until light and fluffy
  • Add in egg and vanilla, mixing until well combined.
  • Slowly add in flour and baking soda and mix until a dough forms.
  • When the dough no longer sticks to the sides of the bowl you will know it’s ready. (You may need to add a little more flour)
  • Roll out the dough in between 2 pieces of parchment paper about 1/4 inch thick.
  • Cut out desired shapes and place on parchment lined baking sheet.
  • Bake for 8 minutes or until slightly browned at the edges.
  • Let cool before frosting.

Buttercream

  • In the bowl of a stand mixer beat butter until light and fluffy
  • add in almond extract
  • slowly add in powdered sugar and beat until combined
  • add in milk 1 TBS at a time until desired consistency is reached
  • Divide into separate bowls and add desired food coloring
  • Frost cookies!
