Pre-heat oven to 375 F
In bowl of a stand mixer, cream together butter and sugar until light and fluffy
Add in egg and vanilla, mixing until well combined.
Slowly add in flour and baking soda and mix until a dough forms.
When the dough no longer sticks to the sides of the bowl you will know it’s ready. (You may need to add a little more flour)
Roll out the dough in between 2 pieces of parchment paper about 1/4 inch thick.
Cut out desired shapes and place on parchment lined baking sheet.
Bake for 8 minutes or until slightly browned at the edges.
Let cool before frosting.
