Nothing better than a big ole slab of warm blueberry crumble cake.
It’s blueberry seasonnnnnnnnn. You know what that means? Blueberry pickin’.
We have never really been into picking our own bloobs. Bloobs are small. The container is so big. Wouldn’t it just take for freakin’ ever? Contrary to what we thought, blueberry picking is so fun. There is really nothing better than picking your own food and making something delicious with it. This blueberry crumble cake is no exception.
This cake has become a dessert staple for both of us. It’s so easy to throw together and it’s so delicious paired with a hot cup of coffee, ice cream, or on it’s own! This cake would also be really good with strawberries in it if you feel like dabbling.
If you like muffins, cake, streusel, and fresh blueberry goodness you are going to love this cake. After all, you already know how important a good streusel topping is to us.
Even though we are really ready for Fall, and crisp air, pumpkins, caramel apples, Halloween (is this even still happening?), and everything else Autumn related, we will certainly miss the fresh fruit of Summer.

Blueberry Crumble Cake
Ingredients
- 2 cups flour
- 3/4 cup sugar
- 2 1/2 tsp baking powder
- 1/4 cup butter room temperature
- 3/4 cup milk
- 1 egg
- 2 cups fresh blueberries
Crumb Topping
- 1/2 cup sugar
- 1/3 cup flour
- 1/2 tsp cinnamon
- 6 tbsp cold butter cubed
Glaze
- 1/4 cup powdered sugar
- 2-3 tbsp milk
Instructions
for the crumb topping
- In a medium bowl mix together flour, sugar, cinnamon and butter.
- Using a pastry blender break up the butter and mix until you have a wet sand type of consistency. Set aside
For the batter
- Preheat oven to 374 degrees F. Grease an 8X8 pan.
- Mix together flour, baking powder, sugar, butter, milk and egg in a stand mixer until smooth.
- Fold in the blueberries.
- Spread the batter into the pan.
- Sprinkle the crumble mixture evenly on top of the batter
- Bake for 45 minutes or until toothpick inserted comes out clean
for the glaze
- Mix together the sugar and milk
- If too thin, add more sugar. If too thick, add more milk
- Once cake is cooled, drizzle with the glaze
