Hello, friends! We are excited to report that it’s officially ice cream season over here. Do you know what that means? It means we will be eating ice cream every day until the weather drops below 60 degrees again. Hooray!
Before we get into the fun stuff, let’s get the not so fun stuff out of the way. How are you all doing? Are you hanging in there? Is life slowly starting to find some sort of normalcy again? We’ve settled into a nice little routine, and the sunshine that we’ve been getting has definitely helped to boost morale.
You know what else helps boost morale? Ice cream. This no churn recipe is the EASIEST ice cream you will ever make, and it’s so tasty. If you’ve been with us for a while you might recognize this recipe from the pre-hacked Cupcake Chronicles archive. This recipe is so delicious and fool proof that we knew we needed to bring it back to life in some way, and here we are.
All you need is the base of heavy whipping cream and sweetened condensed milk, and you can add any additional flavors and mix-ins you want! I knew I wanted to do something bright and cheerful to commemorate the amazing weather we’ve been having recently, so rainbow sprinkles and frosted animal crackers seemed to be the way to go (can you ever go wrong with frosted animal crackers?)
When you think of no churn your mind probably immediately goes to the grainy, flavorless plastic bag astronaut ice cream you had to make in middle school science class. (no? just me?) I promise you that this is nothing like that! It’s sweet and creamy and the perfect warm weather dessert. (Or any weather honestly. We are team ice cream 365 over here).
Make our caramel filled chocolate chip cookies to go with it and you’ve got yourself a real party. Yes, we know. Socially distant and all of that.

No Churn Animal Cracker Ice Cream
Ingredients
- 1 pint heavy whipping cream
- 1 14 oz can sweetened condensed milk
- 1/2 cup rainbow sprinkles
- 2 cups frosted animal cracker pieces
Instructions
- In the bowl of a stand mixer using the whisk attachment, beat your heavy cream until stiff peaks form (about 1 minute)
- Fold in the condensed milk until fully combined
- Fold in your sprinkles and cookie pieces
- Transfer to a bread dish or any kind of storage container
- Freeze for 8 hours or overnight before serving
