These soft and chewy chocolate chip cookies with Cadbury chocolate eggs are the perfect spring time treat!
Happy Thursday, friends! First things first, how ya doin? Finding things to keep busy? If so, please send some ideas our way. There are only so many things in the house we can clean and then clean again. The only ones truly benefiting from this weird life phase are the dogs. They are confused and happy at the same time and go on SO MANY WALKS now. Walking is really the only thing to do these days and we for sure take advantage.
The REAL issue we are having these days is that we bake when we are stressed. or bored. or when we are procrastinating. Basically, we always want to bake. Typically, that is not a big deal because we just bring all my creations to work and they are devoured in .4 seconds. The urge to bake these days is still there, if not stronger than ever. So, you can see where we have an issue working from home now. We bake and bake and bake and have nowhere to bring the desserts. Except to our tummies. We have been newly obsessed with baking cookies and made 3 separate batches over the past week alone. 80% of those cookies have been eaten by us. Help.
This is by far one of our favorite cookie recipes. It is foolproof, delicious, quick and did we say delicious? We here at The Cupcake Chronicles are ooey gooey slightly underbaked, cookie people, and these cookies are just that. You still get a crispy edge but the inside is so soft that you can’t eat just one.
Why we love these chocolate chip cookies
This chocolate chip cooke recipe is the perfect base for just about anything you want to throw in your batter. If you aren’t feeling the Cadbury eggs you can simply leave them out and just add in the chocolate chips. We have also made these with sprinkles, m&m’s and peanut butter cups.
This recipe is a smaller batch which is slightly helpful during these quaran-times. You still get about 12-16 cookies depending on how big you make them, but you can freeze the dough to use at a later date so you always have cookies on hand.

Cadbury Chocolate Chip Cookies
Ingredients
- 1 1/3 cup flour
- 1 tsp baking soda
- 1/2 tsp cornstarch
- 1 stick unsalted butter room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 egg
- 1 cup chocolate chips
- 1/2 cup mini Cadbury eggs
Instructions
- preheat oven to 350 degrees F and line a cookie sheet with parchment paper
- Melt butter in the microwave until very soft and almost completely melted. 30 seconds at a time.
- In the bowl of a stand mixer beat together the sugars, vanilla and butter. Mix for 1 minute.
- Add in the egg and mix until combined. Scrape down the sides of the bowl.
- In a seperate bowl mix together flour, baking soda, and cornstarch.
- Slowly add the dry ingredients into the wet ingredients. Mix until a dough forms.
- Fold in the chocolate chips and Cadbury eggs.
- Using a cookie scoop, form balls and place on your baking sheet.
- Bake for 10-13 minutes depending on how done you like your cookies
- Let cool on pan for 5 minutes and transfer to a wire rack.
