These quick and easy strawberry shortcakes are a perfect end of summer treat.
Summer is coming to an end and dare I say…I am excited. We live in a place where winter sticks around for 9 months out the year. It gets to the point where you feel like if you do not see warm sun soon you will literally die. I am not saying that I am by any means ready for snow, and cold air, and spending 30 minutes scraping ice off of my windshield before I go anywhere..no. Hell no. BUT, I am ready for crisper air, sweaters, pumpkin patches and apple cider.
This is the perfect end of Summer treat because it is light and fruity but also a little decadent with the buttermilk biscuit and honey glaze on top. Now before you start applauding me for making my own biscuits from scratch..I am just going to say that I did not. These are straight from a can. A nice can, but a can regardless.
It is no secret that we love shortcuts in baking when appropriate and necessary. After all, cake mix is fool proof and delicious. These biscuits are no different. Have I ever made biscuits from scratch? No. In fact, the thought has never even crossed my mind. There is nothing wrong with making them from scratch, but personally, I am not there yet. Do they take a long time to make from scratch? I don’t fricken know. I have never even looked up how to make them. But with all the time I saved by using pre-made, I now have the time to Google it.
There are really only 5 steps to this dessert.
Make your biscuits
Whip your cream
Macerate your berries
Make your glaze
Assemble
That’s all folks. You can swap out the strawberries for any fruit really. It all works the same.

Easy Peasy Strawberry Shortcake
Ingredients
for the biscuits
- 1 tube store bought biscuit dough
Whipped cream
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Berries
- 1 cup strawberries
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
Glaze
- 1/4 cup heavy cream or milk
- 3/4 cup powdered sugar
- 1 tbsp honey
Instructions
- Cook your biscuits according to the package. You can also brush some melted butter on top of the biscuits before baking for a little extra somethin’ somethin’
- Put your berries in a bowl with the sugar and vanilla. Set aside
Whipped cream
- Whip the cream until light, fluffy and thick. Mix in powdered sugar and vanilla
Glaze
- Mix heavy cream and sugar together with the honey. If too thick add more cream, if too think add more sugar
Assembly
- Cut biscuits in half and top with a dollop of the whipped cream.
- Top with some berries.
- Spread some of the glaze on top
