This small batch cupcake recipe makes just two perfect chocolate cupcakes!
Okay, so listen we all have those nights when you just need something sweet. Usually it’s what we refer to as the stress eats. You’re tired, you’re stressed and God Dammit you just want dessert. For us, this feeling comes hand in hand with a strong craving for chocolate cake.
Now, we all know the chaos that would ensue if we took that craving and proceeded to made an entire chocolate cake.. We would continue to eat that cake every. single. day. until it was gone.
I’m not going to sit here and pretend that the idea of eating a piece of chocolate cake every night doesn’t thrill me, but for the sake of my waistline and my blood sugar, we have a better alternative.
This chocolate cupcake recipe is perfect because it makes just TWO perfect chocolate cupcakes.
Satisfy your sweet tooth with just a few simple ingredients and 20 minutes of your time. Perfect for people that love a baked treat every once in a while but don’t need 24 cupcakes taunting them from the kitchen counter every day.

Chocolate Cupcakes for Two
Ingredients
- 1/8 tsp baking soda
- 3 TBS flour
- 2 TBS sugar
- 1 1/2 tsp cocoa powder
- 2 TBS water
- 1 TBS oil
- 1/8 tsp vanilla extract
- 1/2 tsp brewed coffee
Chocolate Frosting
- 2 tbsp unsalted butter softened
- 1 tbsp cocoa powder
- 4 tbsp powdered sugar
- 1 tsp heavy cream
Instructions
- Preheat oven to 350 F. Line your cupcake tin with 2 liners
- Whisk flour, sugar, cocoa and baking powder until combined.
- Add in water, oil, vanilla and whisk until combined.
- Divide evenly between your 2 liners.
- Bake 18 minutes or until toothpick inserted comes out clean.
Frosting
- Place all frosting ingredients into a small bowl and mix with a hand mixer until smooth and fluffy.
- When cupcakes are cool, spread frosting on top
Notes
- If you want a more fudgy frosting omit the heavy cream and use a dash of milk if it is too thick. It is a very small amount of coffee that is needed so if you want to leave it out that is fine! They will still taste great!
